The rich, nutty, somewhat smoky aroma and taste of Freekeh make a great base for Moroccan style dishes. Freekeh is similar in texture to Bulgur Wheat and cooked in the same way. Freekeh is a grain made from durum wheat. It is roasted when the grain is young and green to remove the outer shells. Then the grain is cracked in different ways to get a finer grain, or not depending on the use you want out of it.
